The only negative thing about marrying the love of your life, and it doesn’t happen to everyone, but it happened to me times 4, is you gain a little weight. Call it happiness, call it a celebration of life, call it the end of an anxiety-ridden existence. I don’t care what you call it, but I gained about 40 lbs. when I married Chris. His weight increased, as well, but not quite like mine. Now in all fairness to him and our relationship, I have reached that “certain age,” where the metabolism slows down and unless you do cardio all day, and I mean ALL DAY, you will put on a few pounds. I have also struggled with weight issues my entire life, my first diet being prescribed by a doctor when I was eight.
Now understand, I am not making excuses or asking for sympathy. I am merely setting the stage for what I call our Keto Adventure. Chris and I tiptoed into the low-carb lifestyle before but recommitted at the end of 2017. In true Carmen fashion I threw myself into the study of keto, reading keto books, perusing keto recipes, and following keto Instagram pages. Almost 20 lbs. later and a full pinterest board, I am hooked.
In the beginning, keto was not easy. My body craved carbs, especially in the form of sugar. I have always indulged my sweet-tooth, as I prefer chocolate to steak and cookies to vegetables. Chris, on the other hand, likes steak and potatoes and bread! We were a match set. I made the same dishes my mother made for my meat and potato-loving father, and then I topped it off with a bowl of ice cream. Haagen Dazs chocolate and peanut butter to be exact! (Don’t even look at the nutrition facts, people!) Nevertheless, if you can get through the initial detoxification and deny your body the carbs it has grown accustomed to, your body will eventually enter a beautiful state of fat-burning ketosis.
I am not going to get all scientific with you. If you want the science, find a scientist. I’m just a teacher whose pants wouldn’t fit, and I needed a lifestyle change, not a diet. I am happy to say, I am satisfied if I don’t lose another pound or if I lose 25 more. I have found a way to eat that satisfies my soulmate and me.
